Cold Soup Recipe

Ingredients (For 10 portions)

  • Eggs 4 
  • Radishes – 200g
  • Pickled Beetroot – 500g
  • Cucumber – 500g
  • Spring Onions – 60g
  • Dill Fresh – 50g
  • Water – 1L
  • Kefir – 1.5L
  • Mustard – 1 tsp
  • Vinegar – 1 tbsp
  • Salt and Pepper

Recipe is very simple:

Hard Boil eggs (no runny yolks) and cool them down. Radishes, Cucumber, Cooked Eggs and Pickled Beetroot should be grated on a cheese grater. Spring onions and Dill cut into small pieces. Put all of those ingredients in a big pan, add mustard and vinegar, and mix well. Add Kefir and water to a mix and finish ‌with salt and pepper to taste. 

You can add kefir and water in any proportions you prefer. If you like thick soup, add more kefir. If not, add more water. 

Let the soup stand in the fridge for 30-40 minutes before eating. Can be served with bread or jacket potato on the side.
